Gingerbread cookies, so typical of colder countries, have become popular all over the world. Also, they are usually made at Christmas, so we want to share the recipe with you all. However, first of all, it is necessary to highlight certain aspects about cookies in general.

Cookies are part of the breakfast and snack for most of the population. However, they  are made with the same ingredients as any baked product  and therefore are nutritionally similar.

Just read the label and observe the order in which they appear: refined or whole wheat flour, sugar or sweetener, refined olive, sunflower or palm oil, whey and other additives. Furthermore, depending on the type of biscuit, we can also find eggs, chocolate, cream, etc.

For that reason, they are part of the bakery group  and the only thing they provide is sugar and trans fat.

Furthermore, each brand uses its own strategies to attract a specific audience. For example, for children, brands use the shapes of their favorite cartoons or animals to encourage fun and imagination.

Interestingly, the brands took advantage of the fact that there was a consensus on the inclusion of carbohydrates in breakfast to promote the consumption of cookies. However, if we look closely, each country eats breakfast according to its gastronomic culture, so there is no ideal breakfast as long as it is healthy.

For all that has been exposed, they have a negative impact on health, since their habitual consumption increases the risk of:

  • Overweight and obesity.
  • Type 2 diabetes.
  • Fatty liver.
  • Cardiovascular diseases.

What if the cookies are homemade?

In that case,  the only thing you can change is the quality of the ingredients. Like? Replacing white flour with wholemeal, reducing the amount of sugar and using virgin olive oil. Another option in relation to sugar is to replace it with fruits or nuts, such as dates, raisins, prunes, etc.

Ginger Biscuits

Ingredients

  • 100 g of whole wheat flour.
  • 30 g of corn starch.
  • 100 g of ground almonds.
  • 50 g of rice syrup.
  • 1 tablespoon of powdered ginger.
  • 50 g of virgin olive oil.
  • 1 tablespoon of ground cinnamon.
  • 1 teaspoon of yeast.
  • 75 ml of milk or vegetable drink without added sugar.
  • 1 pinch of salt.

How to prepare gingerbread cookies

First, preheat the oven to 160°C. Then  mix in a bowl the dry ingredients such as flour, starch, yeast, cinnamon, ginger, salt and ground almonds. Add olive oil and rice syrup. Then add milk or vegetable drink. Mix everything until smooth and get a moldable dough.

Spread the dough on a surface covered with flour and roll out with the rolling pin. In the latter case, use a cookie cutter to get the desired shape. Ideally, they should have Christmas motifs. Place them on waxed paper in a tray. Bake for about 10 or 15 minutes  or until golden. Finally, just let it cool.

Remember that cookies should be eaten sporadically as they increase the risk of obesity and type 2 diabetes. So, make them from time to time to celebrate a birthday or special occasion. Plus, it’s an opportunity for your kids to get their hands dirty in the kitchen and enjoy time with you.
